MARINATED PORK ROAST | |
A friend shared this with me when I was first married, 31 years ago. It's great for company served with fresh applesauce and rice pilaf or brown and wild rice casserole. Pork roast, two pork tenders tied together to form a round roast. Apply spices in order given to roast: Sprinkle with: Garlic salt Dry mustard (not too much) Fines Herbs (Spice Islands) Paprika Seasoned pepper Then rub generously with dark or light brown sugar. Pierce meat gently. Put meat in a ziplock bag; turn occasionally. Marinate for a minimum of 1 hour to overnight in the refrigerator. The sugar will liquify and give the meat a wonderful flavor. Roast in the oven with a meat thermometer, uncovered (the best way is to rotisserie it on the bar-b-que or on the grill). |
