GERMAN REUBEN CASSEROLE 
3 med. potatoes, cooed and diced
1 (16 oz.) sauerkraut, drained
2 tbsp. parsley flakes
1/2 c. Thousand Island Dressing
1/2 lb. smoked sausage, sliced
3 oz. (3/4 c.) Swiss cheese, grated

Mix all ingredients except Swiss cheese. Place in casserole dish and cover. Bake at 350 degrees for 25 minutes. Sprinkle cheese onto casserole and bake 5 minutes uncovered.
