GERMAN REUBEN CASSEROLE 
3 med. potatoes, cooked
1 (16 oz.) can sauerkraut, drained
1/2 c. Thousand Island dressing
1/2 lb. Echrich Smoked or Polish Sausage, thin sliced
2 tbsp. chopped parsley
3/4 c. shredded Swiss cheese
1/2 green pepper, cut into strips

Peel and cube potatoes. Set aside. Combine sauerkraut, sausage, dressing and parsley. Add potatoes and mix together. Spoon into 9 or 10 inch glass baking dish. Bake at 350 degrees for 25 to 30 minutes. Then sprinkle cheese and green pepper strips over top of casserole and bake 5 minutes more. Serves 5 people.
