SWEET AND SOUR PORK CHOPS 
4 boneless pork chops
2 tbsp. cooking oil
2 tbsp. cornstarch
1 tsp. salt
1/4 c. brown sugar
1/4 c. vinegar
1 c. pineapple juice
1 tbsp. soy sauce
1 med. onion, sliced
1 lg. green pepper, diced

Preheat oven to 350 degrees. Brown pork chops in oil. Place in baking dish. Combine other ingredients except onion and green pepper in saucepan, bring to boil. Cook 2 minutes. Pour thickened sauce over pork chops and top with onions and pepper. Bake covered for 1 1/2 or 2 hours, until chops are tender. Double sauce recipe if serving over rice.
