STIR-FRY SPINACH 
3 tsp. lemon juice
1 1/2 tbsp. soy sauce
1 1/2 tsp. sugar

1 1/2 c. celery, diagonal slices
1 can mushrooms (or 1 c.)
1/2 c. onion, thinly sliced

6 c. torn spinach
Lemon juice mixture

Cook, stirring quickly, about 2 minutes or until vegetables are tender-crisp and spinach is just limp. Do not overcook.
