STIR FRY SPINACH 
1 lb. fresh spinach
1 tsp. salt
1/2 tsp. sugar
1/4 lb. shredded ham
3 tbsp. peanut oil

Heat peanut oil in wok. Add 1/2 pound fresh spinach, tossing to coat leaves with oil. Add the other 1/2 pound of spinach; stirring until all leaves are coated. Add salt and sugar along with shredded ham; mix well. Cook and stir 1 minute. (NOTE: If the ham is salty, omit salt in recipe.) Delicious served with Spicy Chicken With Peanuts (in Main Dish section).
