STIR FRIED SPINACH 
2 bunches spinach
1 tbsp. oil
1 to 2 tbsp. soy sauce

Wash and drain spinach. Wring out spinach to get as much water out as possible. Heat oil in large frying pan or wok. Sprinkle a little salt in oil.

Fill hot pan with a couple handfuls of spinach, when this starts wilting stir in the rest. Remove from heat when all is wilted and still dark green add soy sauce. Eat. Don't over cook.
