DIABETIC FRUIT AMBROSIA 
1 1/2 c. lowfat vanilla yogurt
1 (20 oz.) can crushed pineapple in juice
1 tsp. unflavored gelatin
1 tsp. coconut extract
6 pkg. Sweet One (granulated sugar substitute)
2 (11 oz.) cans mandarin oranges in extra light syrup, drained
3 tbsp. finely chopped dates
2 tbsp. chopped walnuts
3-4 fresh strawberries for garnish

Place yogurt in colander lined with cheesecloth, paper coffee filter, or paper towel. Set over a bowl and drain 1 hour.

Meanwhile, drain pineapple, reserving juice. Place 1/4 cup reserved juice in small saucepan; sprinkle gelatin over juice to soften. Over low heat, cook until gelatin dissolves completely. Pour into a medium sized bowl. Add remaining juice, coconut extract and Sweet One. Refrigerate 20 to 30 minutes or until mixture begins to gel. Stir in drained yogurt.

In large serving bowl, toss crushed pineapple, mandarin oranges, and dates. Sprinkle with walnuts. Gently spoon gelatin mixture on top. Refrigerate 30 minutes. Garnish with fresh strawberries.
