TWICE BAKED POTATOES | |
3 lg. baking potatoes 1 c. diced bacon 1/2 c. chopped onion 3/4 c. sour cream 1/2 c. milk 2 tbsp. butter, softened 1/4 tsp. salt 1/4 tsp. pepper 1 c. shredded Cheddar cheese Preheat oven to 325 degrees. Scrub potatoes and pierce with fork. Bake 1 hour or until tender. In large skillet, fry bacon and onion until bacon is crisp; then drain. When potatoes are cool, cut each in half lengthwise. Scoop out potato. Mash with remaining ingredients, except for cheese. Stir in half of the bacon mixture. Spoon an equal amount of potato into each shell. Bake at 325 degrees for 45 minutes to 1 hour. Spoon on cheese and remaining bacon mixture and bake until cheese is melted. Serves 6. |
