BUTTERSCOTCH PIE | |
1 graham cracker pie crust (can be found already made, by boxed cakes) 1 c. brown sugar, dark 1 1/2 c. milk 4 egg yolks 1 tbsp. butter, melted 4 tbsp. flour 1 tsp. vanilla Mix sugar and flour together. Beat yolks well and add milk. Add dry ingredients. Add butter and cook on low until thick. Remove from heat. Cool and add vanilla. Return to heat and cook 2 minutes or more after it boils. Pour into graham cracker pie crust. MERINGUE FOR CREAM PIES: 3 egg whites 1/4 tsp. cream of tartar 6 tbsp. sugar Beat whites with tartar until soft peaks form. Gradually beat in sugar until stiff peaks form. Spread over fill. Seal to edge of crust. Bake in oven at 325 degrees for 12 to 15 minutes. |
