VEGETABLE PILAF 
1/3 c. sliced onion
1/3 c. sliced celery
1/3 c. diced carrot
1 c. cooked brown rice
1 tsp. grated lemon rind
1/4 tsp. salt
Dash of pepper

Spray Pam in large nonstick skillet, add onion, celery and carrot, saute until tender. Add rice, lemon rind and seasonings, toss lightly. Continue cooking until thoroughly heated, about 2 minutes stirring occasionally. Serves 1. Serving = 1 cup vegetable, 1 cup starch.
