VEGETABLE PILAF 
2 c. long grain rice
3 3/4 c. water
Salt
1 onion, finely chopped
1/4 c. polyunsaturated butter
2 tomatoes, peeled and chopped
1 sweet red pepper, seeded and chopped
2 celery stalks, finely chopped
4 oz. broccoli, chopped
4 oz. mushrooms, chopped
1/4 tsp. cayenne pepper

Put rice in saucepan with water and salt. Bring to boil, cover and simmer for 15-20 minutes or until rice is tender and all liquid is absorbed. Remove from heat and set aside. Keep warm.

Melt butter in frying pan. Add onion and fry until soft, not brown. Stir in tomatoes, red pepper, celery, broccoli, and cook, stirring frequently, for 10 minutes. Stir in mushrooms and cook 3 minutes more. Season with cayenne and salt. Add rice and stir well. Cook 10 minutes more to heat rice. Serves 4.
