CRAB PILAF 
1 (7 1/2 oz.) can crab meat
1/4 c. vegetable oil
1/2 c. thinly sliced onion
1/2 c. diced celery
1 (10 oz.) pkg. frozen mixed vegetables, unthawed
3 c. cooked rice
1/4 c. dry roasted salted peanuts

1. Drain and flake crab meat. Remove any bony tissue, if present.

2. Pour oil in wok and preheat, uncovered, at medium-high for 4 minutes.

3. Add onion and stir fry 1 minute. Push up the side.

4. Add celery and stir fry 1 minute. Push up the side.

5. Add mixed vegetables and stir fry 5 minutes. Push up the side.

6. Add rice and stir fry 5 minutes.

7. Add crab meat and peanuts. Stir all foods in wok until evenly combined. Heat 3-4 minutes or until hot, stirring occasionally. Reduce heat to low for serving. Serve immediately in individual serving bowls with soy sauce. Makes 6 servings. Hint: Tuna may be substituted for crab meat.
