THREE "C" BREAD 
3 eggs, beaten
1/2 c. cooking oil (I use Crisco)
1/2 c. milk
2 1/2 c. all-purpose flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 c. shredded carrots (don't pack)
1 (3 1/2 oz.) can coconut (1 1/3 c.)
1/2 c. snipped cherries
1/2 c. raisins
1/2 c. chopped nuts (I use walnuts or pecans)

Sift flour, sugar, salt, baking powder and soda, cinnamon. Combine eggs, milk and oil. Add egg mix to flour mix, just until thoroughly mixed. Stir in carrots, coconut, cherries, raisins and nuts. Turn into well greased large loaf pan, 9 x 5 x 3 inch. Bake at 350 degrees for 55-60 minutes. Cool thoroughly.
