COURTYARD WHOLE - WHEAT BREAD 
6 c. wheat flour
4 c. white flour
1 c. sugar
1 tsp. salt
1 c. butter
1/2 c. molasses
4 tbsp. instant yeast
1 qt. water
1 qt. milk
2 c. white flour (approx.)

Put sugar, salt, molasses, milk, water and butter in large bowl. Heat to no more than 110 degrees. Add yeast; stir for a few minutes. Let set for approximately 10 minutes. Add flour; mix and let set covered with cloth until dough rises, approximately 1/4 to 1/2 inch thick. Roll into bundle; cover with cloth. Let stand approximately 20 minutes. Put into greased bread pans. Let it rise; beat it down once. When bread has rerisen, put in preheated oven for 25 to 30 minutes. Makes 6 (1 3/4 pound) loaves and 2 to 3 (1 pound) round loaves. Serves 36 to 42.
