1 1/2 lbs. red potatoes, peeled and diced 1/2 c. chopped onions 1/2 c. chopped celery 2 tsp. chicken flavored bouillon granules 1/2 tsp. pepper 1 (10 1/2 oz.) can No Salt, Ready-Serve Chicken Broth 1 1/2 c. water 1/2 c. evaporated skim milk 1 tbsp. reduced calorie butter Combine first 7 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, simmer 15 minutes. Stir in milk and butter. Place half of mixture in container of electric blender; blend until smooth. Return to saucepan, stirring well. Yield: 5 cups - 134 calories per cup serving. |
