CRANBERRY SURPRISE LOAF | |
1 (8 oz.) pkg. cream cheese, softened 3/4 c. sugar 3/4 c. apple juice 1/4 c. butter, melted 1 egg, beaten 1 1/2 c. cranberries (fresh or frozen), coarsely chopped 1/2 c. nuts, chopped 1 egg 2 c. flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt Grease and flour bottom of 9 x 5 x 2 3/4-inch loaf pan. Beat cheese until light. Add 1 egg and 3/4 cup sugar. Set aside. Mix flour, 1 cup sugar, baking powder, baking soda and salt. Stir in apple juice, butter and beaten egg. Fold in cranberries and nuts. Spoon half of batter into pan. Layer cream cheese mixture evenly over batter. Top with remaining batter. Bake at 350 degrees, 65 to 75 minutes, or until top springs back. Cool 15 minutes. Remove from pan. |
