CRANBERRY SURPRISE LOAF 
2 (3 oz.) pkg. cream cheese, softened
1 egg
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. apple juice
1/4 c. melted butter
1 egg, beaten
1 1/2 c. coarsely chopped fresh cranberries
1/2 c. chopped nuts

1. Grease and flour 9 x 5 inch loaf pan.

2. In a small bowl, mix cream cheese and egg together until fluffy. Set aside.

3. In a large bowl, mix together flour, sugar, baking powder, baking soda and salt.

4. Stir in apple juice, butter and beaten egg.

5. Fold in cranberries and nuts.

6. Spoon 1/3-1/2 batter into prepared pan. Spoon cream cheese mixture over batter. Top with remaining batter.

7. Bake at 350 degrees for 65-75 minutes. Cool. Wrap tightly. Store in refrigerator.
