CRANBERRY NUT LOAF 
1 1/4 c. cranberries, coarsely chopped
1/2 c. coarsely chopped nuts
1 tbsp. grated orange rind
2 c. all-purpose flour
1 1/4 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
2 tbsp. shortening
3/4 c. orange juice
1 egg, well beaten

In a bowl mix flour, sugar, baking powder, salt and baking soda. Cut in shortening. Stir in orange juice, egg and orange rind; mixing just to moisten. Fold in nuts and cranberries.

Spoon into greased and floured loaf pan. Bake 60 minutes in 350 degree oven or until a toothpick comes out clean inserted in center of loaf. Cool 15 minutes in pan. Remove from pan. Cool completely wrap and store overnight.
