ZUCCHINI BEEF BAKE 
5 med. zucchini, sliced into 1/4" rounds
2 tbsp. oil
1 lb. ground beef
1 med. onion, chopped
1/2 c. diced celery
1 can toamto sauce
1 c. sliced mushrooms
1/4 c. red wine
1/2 tsp. salt
1/2 tsp. basil or oregano
1/4 tsp. pepper
8 oz. shredded mozzarella

Spread zucchini evenly in 9 x 13 inch pan and set aside. In large skillet heat oil and brown ground beef, onion and celery. Stir in tomato sauce, mushrooms, wine and seasonings. Spoon over zucchini. Sprinkle with shredded cheese. Bake at 350 degrees for 20-25 minutes or until cheese is melted and mixture is bubbly.
