FAMILY ZUCCHINI BAKE 
1 1/2 lbs. ground beef
1 onion, chopped
1-2 cloves garlic, minced
1 (6 oz.) can tomato paste
1 (15 1/2 oz.) can spaghetti sauce (or your own home made)
1 can mushrooms, sliced
1 tsp. basil
1 tsp. oregano
Salt and pepper to taste
3 medium zucchini, cut into 1/4 inch slices
1/4 c. flour
4 eggs
1 c. milk
1/2 c. grated Parmesan cheese

Brown beef and onion. Add garlic, salt and pepper. Stir in tomato paste, spaghetti sauce and spices. Heat to boiling, then simmer five minutes or so.

Coat zucchini pieces well with flour. Alternate layers of zucchini and meat mixture in 9x12 inch pan. Cover with foil and bake 375 degrees, 30 to 45 minutes.

Beat eggs and add milk; beat well. Pour over hot mixture. Sprinkle with grated Parmesan cheese. Bake 20 minutes longer until custard is set.

Serves 8.
