EXOTIC NEWPORT CHICKEN 
2 chickens, frying size, cut up in pieces
1/2 tbsp. bacon grease (opt.)
1/2 tbsp. olive oil
2 onions, chopped
1 clove garlic, pressed
3 tsp. curry powder
1/2 tsp. dried thyme
1/2 c. toasted almonds
2 green bell peppers, sliced
1 1/2 tsp. salt
1/2 tsp. pepper
1 c. flour, as necessary
1/2 tsp. parsley flakes
5 c. canned tomatoes
3 tbsp. currants

Wash and dry cut chicken pieces. Salt, pepper and flour chicken. Fry in olive oil (or bacon grease and oil). Remove chicken and place in baking pan. Saute onions and garlic. Add tomatoes, almonds, currants and seasonings. Pour over chicken. Bake 45 minutes at 350 degrees. Serve over rice. Serves 8 to 10.
