ELIZABETH SWAN'S FAMOUS ROLLS | |
1 c. milk, scalded 2 tbsp. butter 1/4 c. sugar 1 tsp. salt 1 pkg. yeast 1/3 c. warm water 1 egg 4 c. flour Add butter, sugar, and salt to scalded milk. Cool to lukewarm. Dissolve yeast in warm water. Beat egg; add yeast and milk mixture. Beat in flour. Cover and refrigerate at least 4 hours (this is first rising). Dough may be held in refrigerator for up to 2 days. Knead dough slightly, roll out and shape as desired. Use butter between layers or folded into rolls. Bake at 400 degrees for 5-10 minutes, then turn down to 325 degrees until done. This also makes an excellent loaf of bread. |
