ELIZABETH'S PIEROGIS 
2 c. flour
1/2 tsp. salt
2 tbsp. melted butter
1/2 c. warm water
2 eggs, well beaten

SAUERKRAUT FILLING:

1 can sauerkraut
1 med. onion, chopped

CHEESE FILLING:

2 lbs. Ricotta cheese
4 eggs
Cinnamon
Salt to taste

In a medium mixing bowl, place flour and salt. Add to this the melted butter and warm water. In a separated bowl, beat together 2 eggs, then add eggs to flour mixture. Work eggs into dough mixture until all ingredients are well blended. Form dough into two dough balls. Allow dough to rest for at least one and a half hours.

Roll out dough onto a wooden board and cut into desired size. Fill with cheese or sauerkraut. Wet edges of dough and press shut. Cook in boiling salted water until they rise to the top.
