PIEROGY (PEROHY) 
3 cups flour
2 eggs
1 tsp. salt
1 tbsp. oil
Enough flour to make workable

LARGE:

7 1/2 c. flour
8 eggs
1 tbsp. salt
3 tbsp. oil
7 c. warm water

Mix all together then add flour. Roll out and cut into squares. Fill with desired filling. Fold to make triangles - pinch edges securely. Drop into boiling salt water for 10 minutes. Served with hot melted butter and chopped sauteed onions.

FILLING: Cottage cheese
1 (12 oz.) carton dry, cottage cheese
1 egg yolk
4 tbsp. sugar
1/2 tsp. salt

POTATO FILLING:

Boil 6 potatoes until done, drain. Add 6 slices long horn cheese and salt to taste. Mash until smooth and well blended. Cool before filling.

PRUNE FILLING:

Cook 1 pound prune until tender, mash and cool and fill dough.

SAUERKRAUT:

Drain sauerkraut (about 4 cups). Season to taste and brown slowly in butter. Chill before filling.
