PUMPKIN MUFFINS 
1 c. sugar
2 med. eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 c. raisins
2/3 c. oil
1 c. pumpkin
1 tsp. baking powder
1 1/2 tsp. pumpkin pie spice
1/2 c. nuts

Preheat oven to 375 degrees. Mix together oil, sugar and eggs. Add flour sifted with baking soda and baking powder. Add pumpkin and spice. Mix well, then add raisins and nuts.

Spoon into muffin cups (I use paper liners) and bake 15 minutes or until golden brown. Serves 16.

These freeze well and can be warmed in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
