ITALIAN CREAM CHEESE CAKE | |
1 stick butter 1/2 c. shortening 2 c. sugar 5 egg yolks 2 c. flour 1 tsp. baking soda 1 c. buttermilk 1 tsp. vanilla 1 sm. can flake coconut 1 c. pecans, separated Cream together butter, shortening and sugar. Add egg yolks and beat well. Combine flour and soda; alternating with buttermilk. Stir well. Stir in vanilla, coconut and 1/2 cup pecans. Mix well. Beat egg whites and fold into batter. Bake on 350 degrees for 20 to 25 minutes using either 3 (8") pans or 9 1/2" x 13" pans. ICING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter 1 tsp. vanilla 1 box confectioners' sugar Beat cheese and butter. Add rest. |
