ISABELLE'S SYRIAN SALAD | |
Warning: This salad is not for the faint of heart. True to it's ethnic heritage this salad is sharp, bold and spicy. It probably can grow hair on your chest and it definitely will cure what ails you. Some people won't care for this salad, but those will like it will really like it. Prepare the following salad ingredients: Tomatoes (3 lg.), wash Cucumber (1 lg.), peel and wash Pepper (1 lg.), core and wash Celery (2 lg. stalks), trim and wash Radishes (10), trim and wash Parsley (a sm. bunch), rinse Tear the lettuce into bite size pieces. Cut the rest of the vegetables into bite size pieces. Snip the parsley into small bits. Place all vegetables in a large bowl. THE DRESSING: Garlic (3 cloves) Salt (1-2 tsp.) Lemons (1 1/2) Mint leaves (1 tbsp. dried) Mince the 3 cloves of garlic. Mash the garlic into a paste with the salt. Squeeze the juice from the lemons. Mix the lemon juice with the garlic paste. Put some mint leaves through a tea strainer to make a coarse powder. Sprinkle the mint powder over the salad. Pour the dressing over the vegetables. Finally pour about 1/2 cup of cold pressed virgin olive oil over the salad. Toss to coat the salad and serve immediately. |
