BUTTERSCOTCH SQUARES | |
1/2 c. butter, softened 1/2 c. brown sugar, firmly packed 1 1/3 c. flour 2/3 c. sugar 2/3 c. light corn syrup 1 c. (6 oz.) butterscotch pieces 1/2 c. chunky peanut butter 2 c. cornflakes, crushed into sm. pieces Preheat oven to 350 degrees. In small bowl, cream together butter and brown sugar. Stir in flour (mixture will be crumbly). Press mixture into bottom of ungreased 9 x 13 cake pan. Bake 15 minutes. In a medium saucepan, combine sugar and syrup. Bring to a boil. Remove from heat and add butterscotch pieces and peanut butter, stirring until smooth. Stir in cornflakes; mix well. Spread mixture over warm baked layer. Cool thoroughly in pan. Cut into squares. |
