ITALIAN "MEAT" BALLS 
6 eggs, beaten
1/2 c. grated American cheese
1 c. ground nuts, pecans and/or walnuts
1 c. cracker crumbs
1 onion, chopped
1 tsp. soy sauce
Parsley, sage, salt, sweet basil, to taste

Beat eggs; add other ingredients and drop by spoon into deep oil (size of walnut). Serve with spaghetti and sauce. Or may be fried as patties and put in tomato sauce, undiluted, and simmered for 1/2 hour.
