RAISIN CRANBERRY RELISH | |
2 cups sugar 1 cinnamon stick 6 whole cloves 1/2 cup water 1 large orange, seeded and chopped 1 (12 oz.) pkg fresh or frozen cranberries 1/2 cup Bacardi's rum (optional) 1 (15 oz.) pkg golden raisins In a large saucepan, combine all ingredients and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the relish has thickened, stirring occasionally. Remove cinnamon stick. Thoroughly chill before serving. Ladle hot relish into sterilized 1/2 pint canning jars and process in a boiling water bath for 10 minutes. This may also be prepared in advance and stored for several weeks in the refrigerator without processing in a boiling water bath. Makes great gifts! Be sure gift jars have been processed in a boiling water bath. Yield: 5 to 6 1/2 pints. Submitted by: CM |
