HOMEMADE LEMON BUTTER 
3 medium fresh lemons
1½ cups sugar
scoop of butter (the size of a walnut)
3 eggs

This is my Grandmother's recipe, great with fried chicken and biscuits or rolls!!

Juice the 3 lemons and grind the rind of one and set aside. Beat 3 eggs and sugar until light and fluffy.

Add butter, juice and rind and mix well. Scrape into a medium sauce pan making sure to scrape the bowl well.

Cook on stovetop on medium heat, stirring constantly to keep the mixture from boiling over or scorching.

Once mixture boils, it will start to turn into a clear lemon color. Once this occurs, continue to cook for 3 minutes while constantly stirring.

Remove from heat and put in heat/cold safe containers. As the lemon butter chills, it will become thick like molasses.

Spread on rolls or biscuits or dip your fried chicken in it while eating.
