HAMBURGER STROGANOFF - CROWD SIZE | |
6 lb. ground beef 6 onions, chopped (about 3 c.) 1/2 c. butter 1/4 c. flour 1 tbsp. plus 1 tsp. salt 4 cloves garlic, minced 1 tsp. pepper 3 (8 oz.) cans mushroom stems and pieces, drained 6 (10 1/2 oz.) cans condensed cream of chicken soup 6 c. sour cream 24 oz. noodles, cooked and drained 1 c. snipped parsley Cook and stir ground beef and onion in butter until meat is brown and onion is tender. Stir in flour, salt, garlic, pepper, and mushrooms. Cook 5 minutes, stirring constantly. Reduce heat; simmer uncovered, 10 minutes. Stir in sour cream; heat thoroughly. Serve over noodles and sprinkle with parsley. Yields 24 servings (2/3 cup noodles and 1 c. meat mixture per serving). |
