HAMBURGER STROGANOFF - CROWD
SIZE
 
6 lb. ground beef
6 onions, chopped (about 3 c.)
1/2 c. butter
1/4 c. flour
1 tbsp. plus 1 tsp. salt
4 cloves garlic, minced
1 tsp. pepper
3 (8 oz.) cans mushroom stems and pieces, drained
6 (10 1/2 oz.) cans condensed cream of chicken soup
6 c. sour cream
24 oz. noodles, cooked and drained
1 c. snipped parsley

Cook and stir ground beef and onion in butter until meat is brown and onion is tender. Stir in flour, salt, garlic, pepper, and mushrooms. Cook 5 minutes, stirring constantly. Reduce heat; simmer uncovered, 10 minutes. Stir in sour cream; heat thoroughly. Serve over noodles and sprinkle with parsley. Yields 24 servings (2/3 cup noodles and 1 c. meat mixture per serving).

Good recipe. Similar to the one I use, but for larger quantities, which was what I was looking for. In the directions, there is no mention of adding the cream of chicken soup, so I forgot it. I had already put it in the crockpot, so added it then, with the noodles, which was fine. I added the sour cream an hour before I planned to serve it. Also, since I made it the night before, I did not cook the noodles, and they were great, not mushy. (I rarely cook my noodles if my recipe stands for a couple of hours in the refrigerator, or if I crockpot it.)
