Jiffy Corn Casserole / CM

RECIPE COLLECTION
“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 (15 oz.) can whole kernel yellow corn, undrained
1 (15 oz.) can cream style yellow corn
1 (8 oz.) carton dairy sour cream
2 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn muffin mix
1/2 cup (1 stick) butter, melted

Mix all together and pour into large, lightly oiled casserole dish.

Bake at 350°F for 55 to 60 minutes.

This recipe is amazing. My Grandmother made it every Thanksgiving, when she passed a few years ago, I fortunately found her recipe, but then lost it. I knew she used the Jiffy corn muffin mix, so happened to google it a year ago and this is the EXACT recipe. Figures, her fudge recipe is the one on the marshmallow fluff container. Everyone loves this corn casserole, and it is a special treat at our house. We also love cheese and add about half a cup to the recipe, then about the end of baking, add a bit more to the top. AMAZING!

Fixed this for years but I had chopped jalapeņos, no egg. Everyone loves it and the extra kick the jalapeņis add to it.

I make it using small cans (8.5 oz.) of corn, 1 egg, 1/2 of a jiffy mix and 1/2 stick butter, works well for just my husband and I.
