Prepare all vegetables for cooking. Place all ingredients in a roasting pan and bake covered for 5 hours at 250 degrees. Add water if needed.

In roast place chicken and vegetables. Bake at 350 degrees for 1 1/2 hours. I love adding snow peas to mine.
