TANGY APPLE RING 
2 c. applesauce
1 (6 oz.) pkg. lemon flavored gelatin
1 (12 oz.) can lemon-lime carbonated beverage
1 tsp. finely shredded orange peel
1/4 c. orange juice
1 c. chopped apple
2 tbsp. chopped walnuts
Mayonnaise or salad dressing (optional)
Watercress (optional)

In medium saucepan heat applesauce just until it bubbles. Stir in gelatin. Cook and stir over medium low heat until gelatin is dissolved. Remove from heat. Cool. Stir in carbonated beverage, orange peel, and orange juice. Chill until partially set (consistency of unbeaten egg whites). Stir in chopped apple and walnuts. Turn into a 4-5 cup ring mold. Chill until firm. To serve, unmold onto serving plate. If desired, serve with mayonnaise or salad dressing and garnish with watercress. Makes 8 servings.
