WINTER APPLE RINGS 
1 c. light brown sugar
1 tbsp. ground ginger
1/2 c. butter
1 c. slivered almonds
8 firm apples, peeled & cored
Ground mace or nutmeg
Whipped cream

Combine sugar and ginger. Melt half the butter in a pan and saute almonds until toasted (watch carefully for burning), turning constantly. Stir in half the sugar-ginger mixture until melted; set aside.

Slice apples into 1/4" rings and saute in remainder of butter; cover and cook over low heat until apples are tender, about 10 minutes. Turn over to cook on the other side a few minutes. Sprinkle the remaining sugar mixture over the apples and let melt.

Place apples on serving platter, cover with sugar, ginger and almond, top with cream and dust with mace. Serves 8.
