SKILLET APPLE POTATO SALAD 
4 med. red potatoes
4 slices bacon, diced
1/4 c. chopped green onion
1/4 c. chopped green pepper
1/4 c. water
1/2 c. cider vinegar
1 tbsp. sugar
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. dry mustard
3 lg. Golden Delicious apples, cored & coarsely diced

Wash potatoes; cook in skins in boiling salted water just until tender. Drain and dice. Saute bacon in large heavy skillet until crisp. Add green onions and green pepper; saute until crisp tender. Stir in water, vinegar, sugar and seasonings; heat to boiling. Add potatoes and apples to skillet. Heat thoroughly, stirring gently. Serve immediately. Makes 6 servings.
