AMY'S FAMOUS POTATOES | |
1 medium potato 1/4 cup (or less) chopped red peppers 1/4 cup (or less) chopped green peppers 4-6 medium sized mushrooms, sliced 1 green onion (scallion or spring onion) 1 slice of Pepper Jack cheese or shredded 4 Cheese Blend cheese (store bought - use as much as desired) 1/2 small onion butter (optional) dash of salt and pepper (optional) This recipe makes one serving. Wash the potato under tap water. Place in microwave for 10 minutes or until the skin of the potato is separated slightly from the inside of the potato. Meanwhile, chop ingredients (peppers, onions, and mushrooms). Grease frying pan with butter or cooking spray. Turn on heat. Toss all ingredients (besides potato and cheese) into the skillet. Cook until onions are slightly browned (but not burnt). Remove the potato from the microwave. (Warning: potato will be hot!) Cut in half and, if desired, add some butter to the potato. Spoon ingredients from the skillet into the potato. Put the slice of cheese or sprinkle shredded cheese on top of the filled potato. Season to taste with salt and pepper. Serve immediately. Enjoy!!
