PUMPKIN COOKIE BARS HOMEMADE
WITH LOVE
 
1 c. flour
1/2 c. quick oats
1/2 c. firmly packed brown sugar
1/4 c. chopped nuts
1 3/4 tsp. cinnamon
1/2 c. melted butter
1 c. Libby's solid pack pumpkin
3/4 c. undiluted Carnation Evaporated milk
1 slightly beaten egg
1/3 c. sugar
1/2 tsp. allspice
1/4 tsp. salt

Combine flour, oats, brown sugar, nuts, and 1 teaspoon cinnamon. Add butter; mix until crumbly. Press into bottom of 13 x 9 x 2 inch baking dish. Bake in moderate oven (350°F) 20-25 minutes. Remove from oven. Reduce oven temperature to 325°F. Combine remaining ingredients. Pour over crust. Bake in slow oven (325 degrees) 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.

CREAM CHEESE TOPPING:

Beat together until fluffy:

1 (8 oz.) pkg. cream cheese, softened
1/4 c. orange marmalade

Spread over cooled bars. Garnish with crushed granola, chopped nuts, or orange peel.

Cut into 32 bars and serve.

May also use Cream Cheese Frosting:

1 (3 oz.) pkg. cream cheese
1 tbsp. milk
2 c. powdered sugar

Blend butter and cream cheese; add vanilla and milk. Beat in powdered sugar.
