SPINACH CASSEROLE WITH MUSHROOMS 
2 c. chopped cooked spinach
2 tbsp. butter, melted
1 tsp. tarragon
1/2 tsp. salt
Few drops lemon juice
18 to 24 mushroom caps, sauteed in butter
4 eggs, well beaten
1/2 c. grated Parmesan cheese

Place spinach in greased 2 quart casserole. Add butter, tarragon, salt and lemon juice. Place mushroom caps on top of spinach. Mix eggs with cheese and pour over mushrooms very gently.

Bake in a preheated 350 degree oven until egg and cheese mixture is set, about 20 minutes.

1/2 can of cream of mushroom or cream of chicken soup may be substituted for eggs.
