SPINACH, ARTICHOKE AND MUSHROOM
CASSEROLE
 
1/2 lb. sliced mushrooms
2 onions, chopped
2 jars artichoke hearts (drain and save marinade)
1 pkg. frozen chopped spinach, thawed and drained
5 eggs, lightly beaten
1 1/2 c Cheddar cheese, grated
Salt and pepper to taste

Saute mushrooms and onion in 2 to 3 tbsp. of marinade. Combine with remaining ingredients in a lightly greased shallow casserole and bake in a 350 degree oven 30 to 45 minutes. Serves 4.
