CONFETTI SALAD WITH MELON 
1/4 lb. spinach leaves
1/2 head lettuce
1 cantaloupe
2 oz. raw ham
2 tbsp. lemon juice
6 tbsp. olive oil

Shred the spinach and lettuce, scoop out the melon with a melon baller. Cut the ham into 1/2 inch strips. Add all items into large bowl and mix or toss. Yield: 4 servings.
