SWEET AND SOUR PORK CHOPS 
4-6 pork chops
1/2 c. cider vinegar
1/4 c. granulated sugar
1/4 c. brown sugar, firmly packed
2 tbsp. soy sauce---or to your taste
1/8 tsp. salt
1/4 c. chopped green onions with tops or reg. onion
1 green pepper, coarsely chopped---or to taste
1 c. coarsely shredded carrots

Dust chips with flour and brown in drippings. Season with salt and pepper. Drain any excess fat. In saucepan combine and cook vinegar, sugar, soy sauce and salt to a thin syrup. Add onion and green pepper. Pour sauce over chops. Cover and cook slowly for 1 hour or until tender. Add carrots and cook a little longer until carrots are hot. Serve chops in the sauce that clings to them. Pass extra hot sauce.
