SWEET - SOUR PORK CHOPS 
6 pork chops
1 onion, sliced
1 clove garlic
1 c. pineapple juice
1 can (8 oz.) tomato sauce
2 tbsp. lemon juice
1/4 c. brown sugar
1 tsp. salt
3 c. hot rice
2 tbsp. flour

1. Trim excess fat from chops. Brown slowly in their own fat in large fry pan. Pour all drippings from pan and remove chops, measure 2 tablespoons back into pan.

2. Stir onion and garlic into pan, saute until soft. Stir in pineapple juice, tomato sauce, lemon juice, brown sugar and salt - heat, stirring constantly to boiling. Simmer 5 minutes.

3. Place chops in baking pan. Pour sauce over chops and cover.

4. Bake at 350 degrees for 45 minutes or until tender.

5. Spoon rice onto heated serving platter; arrange chops and onion on top.

6. If needed thicken sauce, pour over chops.
