SPANISH RICE 
6 slices bacon, fried crisp
3 tbsp. bacon drippings
1 c. white or brown rice
2 c. tomatoes (1 lb. can)
1 med. onion, chopped
2 tsp. sugar
2 c. water
1/2 c. green pepper, chopped
1/2 c. catsup
1 tsp. salt
1/4 tsp. chili powder
1/8 tsp. pepper

In bacon drippings, cook green pepper and onions. Add all ingredients except bacon. Cover and simmer over low heat about 30 minutes or until rice is tender and liquid is absorbed. Add chopped bacon. Makes 5-6 servings.

Note: For quick cooking rice; add 2 1/2 cups minute rice after all other ingredients are added. Remove from heat and let stand 5 minutes. Fluff with fork.
