MOCK SOUR CREAM 
1 c. low-milk cottage cheese
1 tbsp. lemon juice
2 tbsp. skim milk
1/4 tsp. salt

Place all ingredients in a blender and mix on medium-high speed until smooth and creamy. Use as a sour cream substitute, as a dressing for salad or as a delicious vegetable dip.

Makes about 1 1/4 cups.
