BEEF A LA GARDIEN 
5 strips bacon, diced
2 tbsp. olive oil
3 lg. onions, coarsely chopped
3 lbs. stewing beef
1 tsp. rosemary
1 clove garlic
Salt & pepper to taste
2/3 c. sm. green olives
1 c. black olives
4 lg. potatoes, cut in thick slices

Fry bacon in skillet and add olive oil and chopped onions. Cook until golden. Add meat, brown on all sides. Add remaining ingredients and 1 cup water. Cover and simmer until meat is tender. Serve with rice. Serves 6.
