SMOTHERED FRIED CHICKEN 
2 tbsp. vinegar
1 (3 1/2 lb.) broiler chicken
4 ribs celery
4 potatoes
1 sm. onion, sliced
Salt & pepper to taste

Place the vinegar in the bottom of a deep oven-proof casserole dish or Dutch oven with a cover. Add the chicken and surround with the vegetables. Add seasonings to taste. Cover tightly and roast for 1 hour.
