PRIZE WINNING EGGSCELLENT SHRIMP
CASSEROLE
 
2 tbsp. butter
1/4 tsp. salt
1/8 tsp. pepper
Dash of nutmeg (optional)
1 (10 oz.) pkg. frozen chopped spinach, thawed, drained and pressed
1 (6 oz.) pkg. frozen tiny cooked shrimp, thawed and drained
1 c. (4 oz.) shredded sharp Cheddar cheese
1 c. chopped green onions with tops
2 tbsp. flour
1 c. lowfat milk
8 eggs
1 tsp. garlic powder

In medium saucepan over medium heat, cook onions in butter until tender, but not brown. Stir in flour. Cook, stirring constantly, 1 minute. Stir in milk all at once. Cook and stir until mixture boils and is smooth and thickened. Set aside.

In large bowl, beat eggs with seasonings until well blended. Stir in spinach, shrimp, cheese and reserved sauce until evenly combined. Pour into greased 7x11x2 inch baking dish. Bake in preheated 350 degree oven until knife inserted near center comes out clean, about 35 minutes.

Per serving: 213 calories, 17 gm protein, 13 gm fat, 6 gm carbohydrates.
